Vankaya Pakodi Koora Recipe is essentially a Brinjal Pakora Curry tossed in an onion – tomato base flavoured with sambar masala. Best eaten with steamed rice for a soulful simple meal.

Crispy on the outside and soft on the inside, these pakoras are made in the paniyaram pan to reduce the usage of oil.
