You don’t have to be a cowboy or cowgirl to make these cookies or even fall in love with them.
There are so many textures, flavors, and elements in every bite and it’s such a thick and hearty cookie!
They’re like an Oatmeal Chocolate Chip Cookie with the addition of shredded coconut.
The variations are endless!
Make these your own style, bumping up quantities of whatever ingredients float your boat: M&M’s, nuts, chocolate chips, coconut or even crushed candy bars your families favorite.
Making them your own will be adapted to however you like them
Sometimes I add peanut butter chips or raisins instead, sometimes both.
Nuts or No Nuts!
We are lucky enough not to have nut allergies in our home, you can just leave them out.
I usually split the dough in half, add a few nuts just for me because no one else likes nuts.
I always substitute the nuts for another kind of chip, even white chocolate chips are great in this dough.
You can also substitute the nuts with sunflower seeds, pumpkin seeds or another seed you like.
Speaking of Nuts
If you are a nut lover, try adding macadamia or pistachios they are a special treat with those flavorful nuts in this cookie, especially with the coconut.
You can use any nuts you prefer, like, peanuts, almonds, cashews or walnuts.
These have pecans in them which is the original style recipe called for.
A basic recipe you can adapt any way you like!
A Loaded Cookie Dough!
I often associate these as a loaded cookie because of the numerous ingredients that can go into this dough.
These Best Cowboy Cookies are the best eaten with a tall glass of ice cold milk.
The kids always loved these with peanut butter and milk chocolate chips.
Coconut is my Favorite!
I loved more coconut, you can adjust the quantities more or less or what you like.
I did make a mistake one time and didn’t realize I grabbed the wrong Chocolate chips.
They were mint chocolate, no one was a fan of those, sigh.
How did they get their name?
This truly is a terrific tasting cookie that can stand tall with pride.
The chewiness from the oats, the of course, the outer layer of crispness from the shortening and butter make this a unique style cookie.
The “Cowboy Cookie” name, I came across some very interesting history regarding this recipe, which included some of our First Ladies favorites, like Laura Bush.
Apparently, there were many cookie recipes that were printed throughout the years, with many different stories that were told how they came about.

Let me be the first to tell you, no one has any idea as to why the cookie is named “the cowboy cookie.”
Some speculate it’s hardy enough to survive long days out west, while others claim the recipe was developed in Texas where cowboys are apparently prolific.
Whatever theory is right, the cookie sure seems to be fit enough for a cowboys, cowgirls or even Presidents wife!
These Taste Great Still Warm!

I do love homemade cookies straight from the oven, they’re the ultimate comfort food.
But be careful the chocolate is hot, let them cool at least 4 to 5 minutes before devouring one of them!

These Best Cowboy Cookies are delicious still warm with that melted chocolate that’s all gooey inside.
They have a great texture and I like to tell myself they are healthy because they have oatmeal in them, just joking.
The family gets to have a treat once in a while when I make these, good old comfort cookies.
